This is the very first thing my grandmother taught me to make when I was about 3. Hope you enjoy as much as I do.
- 2 cup all purpose flour (240g)
- 1/2 teaspoon salt
- 1/2 teaspoon baking powder
- 1/4 cup lard (bacon fat if available) (56g)
- 3/4 cup water (hot/warm can improve gluten formation) (6oz)
- Mix together flour, salt and baking powder in a large bowl.
- Cut in lard until mixture is crumbly.
- Slowly add the water till incorporated into mixture.
- Knead dough on a floured board till firm ball is formed (about 2 minutes).
- Divide into 8 - 12 balls, and set aside.
- Roll each ball into 6 inch rounds about 1/8 inch thick.
- Cook on a heavy skillet or camal over medium-high heat till slightly browned on each side.
tip: tsp of sugar can add flavour
