Garlic Naan

Ingredients for 6 Garlic Naan:
1/2 cup warm water
1 teaspoon sugar
1 package dry active yeast
1/4 cup plain yogurt
about 2 cups bread flour, plus more as needed
1 teaspoon kosher salt (or 1/2 tsp fine salt)
1 tablespoon garlic butter

  • Cook in a very hot, dry cast iron skillet for 2 to 3 minutes per side

For the Garlic Butter:
1/2 cup melted butter
4 cloves finely minced garlic

Steps

  1. Mix warm water with sugar and active yeast, let proof 10-15 min
  2. Make garlic butter: melt butter until it sizzles, stir in garlic, immediately turn off heat, leave on stove
  3. Add yogurt, bread flour, salt, and 1 tbsp garlic butter
  4. Mix with spoon until dough is shaggy
  5. Mix with hand until you can knead and until everything is pulled off sides of bowl
  6. Transfer onto table, knead 3-4 min until dough is smooth and elastic
  7. Transfer into bowl, drizzle garlic butter and roll around bowl
  8. Cover, let sit 1-2 hours (until doubled, doughs with fat take longer)
  9. Punch down dough
  10. Divide dough into 6 pieces
  11. Rub on table in cupped hand
  12. Dust with flour, cover with plastic wrap, let sit 15-20 min to proof
  13. Roll out on lightly floured surface, ~1/8 inch thick
  14. Press and/or roll freshly chopped cilantro one one side (optional)
  15. Heat dry cast iron on high heat
  16. Lay dough on surface, wait for bubbles, ~2 min
  17. Flip, press gently with spatula, cook ~2min
  18. Brush with garlic butter
