Bittman Crepes and Blintzes

Crepe:

  • 1 c all purpose flour
  • pinch salt
  • 1 tbsp sugar (sweet crepes only)
  • 1 1/2 c milk, more if needed
  • 2 eggs
  • 2 tbsp butter, melted
  1. Whisk together all ingredients
  2. Let sit 1 hr-24hr
  3. Cook with butter on hot griddle

Blintz:

  • 3/4 c all purpose flour
  • pinch salt
  • 1 c milk
  • 3 eggs
  • 2 tbsp butter
  1. Whisk together all ingredients
  2. Let sit 1-24 hr
  3. Beat again
