Chocolate Custard Torsades

Custard

  • 4 egg yolks
  • 1/2 c sugar
  • 2 tbsp flour
  • 1 1/2 c milk
  • 1/2 tbsp vanilla
  • 1 tbsp butter
  • 1/4 tsp salt
  1. Whisk egg yolks, sugar, flour together
  2. Heat milk until low boil
  3. Slowly pour milk into egg mixture, whisking constantly
  4. Return to sauce pan and bring to boil, whisking constantly
  5. Cook for 1-2 min, whisking constantly (should get thick enough to coat back of spatula)
  6. Take off heat, whisk in vanilla, butter, salt
  7. Place in container and cover with plastic wrap touching the top of the custard to prevent skin from forming
  8. Cool in fridge

Torsades

  • package of puff pastries
  • tiny chocolate chips
  • egg for egg wash

Oven: 400

  1. Thaw and roll out sheet of puff pastry lengthwise
  2. Spread thin layer of custard
  3. Sprinkle with chocolate chips
  4. Fold in half
  5. Cut into 2 inch pieces
  6. Twist and place on parchment covered baking sheet
  7. Brush with egg wash
  8. Bake for 15-20 min, until golden
