Rice Pudding

Rice cooker
Ingredients:
2 c. arborio or short-grain rice (rice cooker cup measures, about 1 1/2 regular cups)
2 c. cold water
1 tsp salt
1/2 c. evaporated milk
1/2 c. coconut milk
1 c. sweetened condensed milk
1 cinnamon stick
1 lemon zest (one large piece, not shredded)
1/2 tsp nutmeg
3 tbsp ground cinnamon

Cook short grained rice in rice cooker; meanwhile whisk milks, cinnamon stick, lemon zest, and nutmeg together. When rice is done, let sit for 15 minutes unplugged. Add milk mixture to rice (with cinnamon and zest) and leave on warm setting about 30 minutes, or until your preferred consistency. Discard cinnamon and zest.
