Soft Chocolate Chip Cookies
  • 8 tbsp salted butter
  • 1/4 tsp salt
  • 1/2 c white sugar (or raw cane sugar)
  • 1/4 c packed brown sugar
  • 1 tsp vanilla
  • 1 egg
  • 1/2 tsp baking soda
  • 1 1/2 c all purpose flour (more as needed)
  • 3/4 c chocolate chips
  1. Preheat oven to 350 f
  2. Microwave butter ~40sec (until mostly melted but not hot)
  3. Beat butter with sugars until creamy
  4. Add vanilla and egg, beat until just incorporated (too long and cookies will be stiff)
  5. Add flour, baking soda, and salt. mix until crumbles form, use hands to press crumbles together into dough (right at stage between wet/dry dough)
  6. Add chocolate chips, incorporate with hands
  7. Roll into large balls and place on cookies sheet
  8. Bake 9-11 min until cookies look puffy and dry and just barely golden (do not overbake)
  9. Let cool 30 min
