- 1 lb / 450 g italian durum wheat pasta
- 1 block (7 oz / 200 g) greek feta cheese
- 1/2 cup olive oil
- 1/2 red chili pepper
- 500 g cherry tomatoes
- (4 garlic cloves if you wish)
- black pepper
- salt
- bunch of fresh basil leaves
- Pour olive oil on bottom of baking dish
- Place whole block feta on top
- Chop red chili pepper and add on top of feta
- Pour on more olive oil over top
- Place cherry tomatoes on sides and roll around in oil (also add garlic if using)
- Grind some pepper, season with pinch of salt
- Bake at 400f for 15 min in middle rack
- Increase heat to 440f, move to upper rack and broil for 10 min
- Cook pasta to al dente according to instructions
- Break feta a bit and mix with tomatoes
- Mix pasta into sauce and add plenty of basil leaves
