Mashed Parsnips

150g parsnips, peeled 1/2 inch dice
15g unsalted butter
250g cream
120g water
kosher salt to taste

  1. Place parsnips, cream, water into saucepot
  2. Bring liquid to simmer, cook until parsnips have no resistance to paring knife
  3. Transfer thickened liquid and parsnips to blender
  4. Blend on low speed, ramp up
  5. Add butter and season with salt in blender
  6. Process until extremely smooth
  7. Stop blender and check seasoning, adjust water/salt to preference
