Ramen Noodles

2 cups all purpose flour (300 grams) (or bread flour w/o wheat gluten)
2 tbsp vital wheat gluten (15 grams)
1/2 cup warm water
1 tsp Koon Chun Potassium Carbonate & Sodium Bi-Carbonate (kansui)

-Stir flour an wheat gluten together
-Mix warm water and kansui
-Add liquid to flour
-Mix with dough hook until forms a ball (~5 min)
-Cut dough into quarters (cover quarters not in use)
-Roll to #3 and cut
-Dust generously with flour and twist into nest
