T-Bone steak
  1. Let steak sit for 30-60 min out of fridge
  2. Preheat oven to 425
  3. Heat large cast iron skillet over high heat 5 min or place in preheated oven 15 min
  4. pat steak dry
  5. rub on all sides with olive oil
  6. season with salt and pepper
  7. add tablespoon olive oil to pan, swirl to coat
  8. carefully place steak in pan
  9. sear first side 2 min
  10. flip and sear 2 min
  11. add garlic, butter and rosemary and transfer pan to oven
  12. bake 2-3 min for med rare (130f) (120 rare, 130 med rare, 140 med, 150 med-well, 160 well)
  13. remove steak to plate or cutting board and let sit for 5 min under tin foil
