- Let steak sit for 30-60 min out of fridge
- Preheat oven to 425
- Heat large cast iron skillet over high heat 5 min or place in preheated oven 15 min
- pat steak dry
- rub on all sides with olive oil
- season with salt and pepper
- add tablespoon olive oil to pan, swirl to coat
- carefully place steak in pan
- sear first side 2 min
- flip and sear 2 min
- add garlic, butter and rosemary and transfer pan to oven
- bake 2-3 min for med rare (130f) (120 rare, 130 med rare, 140 med, 150 med-well, 160 well)
- remove steak to plate or cutting board and let sit for 5 min under tin foil
