2-2.5lb pork belly block
Sauce
Roll up pork skin/fat out
Sear on all sides
Put sauce into dutch oven
Put pork in sauce, simmer and skim
Put otishibuta on top (foil with holes, basically)
Rotate every 30 minutes for 2 hours
Ideally rest overnight with sauce in ziplock bag
Save sauce
Ramen eggs
Soft boil eggs (keep eggs in fridge, put into boiling water, take off heat, sit for 7 minutes, ice bath for 3)
Marinade in pork sauce for a few hours or overnight
Runny ~ 6 minutes
Custard ~ 8-9 minutes
